Meet our Chefs

James Jens
James, husband of Riveredge Executive Director Jessica, began his culinary career at The American Club in Kohler, Wisconsin. He has since spent 15 years as Executive Chef at The Blue Star (Colorado Springs), The Opera House & Hilton (Madison), and The Bank Restaurant and Wine Bar (Spring Green). For the past seven years, James has owned Dinners With Class, an in-home cooking class and catering business. The Jens family includes Aspen (7), Ian (4), Berkshire hogs, (now in the freezer) pastured turkeys, and happy chickens.

Darcy Sonsalla
Darcy has been an Executive Chef throughout the Midwest including the Hilton Madison. He and James met while creating culinary feasts at Maple Bluff Country Club in Madison. Now in western Wisconsin, he and his wife Karla are raising chickens, vegetables and one newborn baby boy, Ryker.

“There are two spiritual dangers
in not owning a farm. One is
the danger of supposing that
breakfast comes from the grocery,
and the other that heat comes
from the furnace.”
